A friend and colleague of mine, Mike Thompson recently sent me his latest creation. We worked together previously in digital marketing and Mike remains my go-to-guy for website and social technology but these days his focus is more on "bites" than "bytes".
He has started a biscuit company, making hotel room and restaurant biscuits using Northern Ireland ingredients, as an alternative to the Scottish shortbread and English clotted cream biscuits currently widely available.
His first biscuit is a Honey & Whiskey Hexagon, shaped after the Giants Causeway. He also sells them wholesale to groups and charities for fundraising but is developing a range of biscuits for the hospitality trade.
