A friend and colleague of mine, Mike Thompson recently sent me his latest creation. We worked together previously in digital marketing and Mike remains my go-to-guy for website and social technology but these days his focus is more on "bites" than "bytes". He has started a biscuit company, making hotel room and restaurant biscuits using Northern Ireland ingredients, as an alternative to the Scottish shortbread and English clotted cream biscuits currently widely available. His
